Smoked Tomato & Mozzarella

This is a garnish I made to accompany one of my soups. It is essentially a caprese salad with a little bit of a tweak. Mainly adding the smoked component. Tomatoes hold smoked flavor very well, and once smoked they are extremely versatile. They can be used as a salad, a sauce for meat, a cooked condiment like a ketchup or a garnish for any number of items. I made this for my Roasted Eggplant and Tahini soup. The smokey flavor complimented everything perfectly.

 
 

Ingredients

  • Tomatoes, Roma 8 ea

  • Mozzarella, block 8 oz

  • Salt to taste

  • Pepper to taste

  • Extra Virgin Olive Oil 3 T

Method of Procedure

  1. Wash and cut the Roma tomatoes in half.

  2. Lightly toss the tomatoes with oil, salt, and pepper.

  3. Place on a tray and smoke em.

  4. You don't want to take them too farm, as heat from your smoker will break down the tomatoes, but if you build up a big smoke, then turn off the heat, the tomatoes will absorb the flavor.

  5. Remove from the smoker and place into a bowl with a lid, a large zip lock bag, anything that will trap the smoke flavor then let sit for 2 hours.

  6. Dice your tomatoes and mozzarella and mix together.

  7. Season with salt and pepper.
