Puff Crisps

This is a simple garnish I've made many of times in both professional and home applications. All you really need to make this is a decent amount of counter space, and a rolling pin. It is basically a homemade cracker that adds texture to your dishes that you can season any way you would like. I use puff dough, though you could use pate brisee (tart dough) if you are so inclined. I've included 2 different cuts on it, as I used it both ways for the Turkey Pot Pie soup.

 
 

Ingredients

  • Puff Pastry Sheet 1 ea

  • Butter, melted 4 oz

  • Avenue Spice* 2 tsp

  • Flour as needed

*The seasoning and flavor is optional as you can season them how you like. I used the spice on both versions above.


Method of Procedure

  1. Thaw out 1 sheet (or more if you want) of puff pastry dough.

  2. Preheat your oven to 350 degrees

  3. Liberally coat your counter top with flour and begin to roll out the puff dough, adding flour to both the dough and your rolling pin to reduce sticking.

  4. Once the dough has gotten to your desire thickness (for these it's fairly thin).

  5. Cut to your desire shape and brush with butter then season.

  6. Place on a lined sheet tray and bake until crispy.
