Crispy Pancetta

This is a great garnish that is extremely versatile and is very easy to make. The process is very similar to my crispy chicken skin. Once the pancetta is done, they can accompany a number of dishes and they look nice as a final piece for the plate. The only real challenge here is to make sure they cook evenly and they don't burn on one side of the oven.

Ingredients

  • Pack of pancetta 1 ea

Method of Procedure

  1. Preheat your oven to 250 degrees

  2. Lay out your pancetta on a parchment lined sheet tray.

  3. Cove with another piece of parchment and sheet tray on top.

  4. Put in the oven and place an oven safe weight on top.

  5. Cook until crispy, about 40 minutes to an hour checking every 20 or so minutes to make sure you don't burn.
