This is a great item to make that you can use in a number of different ways. It's a good, healthy snack, great soup garnish, added texture to a salad, etc. I've made this numerous times over the years but this particular version was as a garnish to my Lemon Kale & Chickpea soup. I wanted something that would give a little texture and color, but stay in the same vein of flavor and food. It's a very simple garnish that you can use for soups, salads, entrees, or even enjoy as a healthy snack. You can change up the flavors, but the method is going to be the same.
An alternative way to make this would be to season it, then grill it lightly to get the crispy texture you are looking for. I have done this a couple of times to garnish entrees in restaurants.
Enjoy.
Ingredients
Kale 1 bunch
Sherry Vinegar 1 T
Salt 1 T
Extra Virgin Olive Oil 1 T

Preheat your oven to 400
Stem your kale, then wash and dry it.
Toss the kale in salt and oil, then finish with vinegar.
Lay flay on a lined tray (I recommend using Silpat or other silicone baking sheets) and bake until crispy, checking until crispy on the edges and browned.
