There are a ton of ways to marinate chicken to prepare it for cooking. Normally I alter how I'm marinating/brining/rubbing it based upon the recipe that I intend to make with the finished product. That being said here is a simple (provided you have some basic kitchen items on hand) flavorful marinade that is versatile in the finished product.
Ingredients
Chicken for marinade*
Mustard** 3 T
Avenue Spice 2 T
Roasted Garlic 3 T
Roasted Garlic Oil 1/4 cup
Preserved Lemon 3 slices
The amounts on this recipe are just a proportion, if you have a lot of chicken, or even less, you will want to scale it up or down
Method of Procedure
Mix all ingredients together and coat chicken. Marinate for 24 hours for full flavor
*This recipe can apply to breast, wing, thigh, whole bird, skin on/skin off, boned, etc. Pretty much just whatever chicken you would like to use
**I normally use dijon for this but to cut the spice down I used a grained mustard. Just a decent flavored mustard is what you are looking for
